Ingredients
Box of lasagna noodles
1 cup of chopped onion
1 tablespoon of minced garlic
½ tablespoon of extra virgin olive oil
2 cups of fresh spinach
3 cups of ricotta cheese
3 cups of mozzarella cheese
1 cup of grated Parmesan cheese
1 teaspoon of salt & pepper
1 teaspoon of oregano
1 teaspoon of basil
1 egg
1 jar of pasta sauce
Directions
1. Preheat your oven to 350 degrees F.
2. Boil water in a large pot of water. You can add a dash of salt to the water if you desire.
3. Add the lasagna noodles in the boiling water and cook for 8 to 10 minutes or until your noodles are al dente. After the noodles are cooked, drain the water and run the noodles under cold water.
4. In a saucepan, add the 1 cup of onions, ½ cup minced garlic and the ½ tablespoon of extra virgin olive oil. Sautee them together until the onions are tender. Remove any of the extra virgin olive oil from the saucepan.
5. Next boil the 2 cups of fresh spinach. When the spinach is finished, remove any of the excess liquid from the spinach. Move the spinach to the cutting board and chop it up into smaller pieces. Mix the spinach into the onions and garlic mixture.
6. In a separate boil combine your Parmesan cheese, ricotta cheese, egg, oregano, basil and pepper in a boil. Add the spinach, onions and garlic mixture to your cheese mixture and beat together for about one minute. If you are using an electric mixer then you should beat the mixture together on low.
7. In an oven safe casserole dish, spread a thin layer of pasta sauce on the bottom.
8. Lay one layer of lasagna noodles down until the entire casserole dish is covered with lasagna noodles.
9. Spread half of the cheese and spinach mixture on top the lasagna noodles.
10. Sprinkle one third of the mozzarella cheese over the mixtures.
11. Spread one third of the pasta sauce over the mozzarella cheese.
12. Next cover the sauce with lasagna noodles and repeat the layers steps with the remainder of the cheese and spinach mixture, another third of the mozzarella cheese and another third of the pasta sauce.
13. Cover the sauce with lasagna noodles again; you should be out of lasagna noodles at this point.
14. Cover the lasagna noodles with the remainder of the sauce and cover with aluminum foil.
15. Place the lasagna in the preheated over and cook for approximately one hour.
16. After an hour, remove the lasagna from the oven and remove the foil.
17. Sprinkle the remainder amount of cheese on the top of the pasta sauce. You can sprinkle a small amount of basil on the top of the cheese, if desired.
18. Put the lasagna back into the oven for about 5 minutes or until the cheese has melted.
19. Remove from the oven and let cool for 15 minutes before serving.
