When a lot of persons think of pancakes, they tend to simply think of a general breakfast item that can only be spiced up with the addition of things like a whole wheat recipe, chocolate chips, or blueberries. The process of making potato feta pancakes involves preparing the potatoes, mixing in the ingredients, and then preparing the actual pancakes. They can even be saved for latter and eaten cold.

Preparing the potatoes

The first part of making the batter for the potatoes involves grating up the potatoes with the use of a standard cheese grater. The potatoes should be put into a colander with some chopped onions and a very small amount of salt. The potatoes should be rinsed well and then drained for about fifteen minutes.

In a separate bowl, the rest of the ingredients can be mixed together. Some eggs should be beat in a bowl, and then some flower and herbs should then be added. Some feta should then be added to the mixture, and then mixed in until they become a type of thin batter. The potatoes in the colander should be squeezed with one’s hands in order to get rid of the water in them, and then rest of the ingredients should be mixed together. If the batter seems a little bit too lumpy, then a little bit more water or some of the juice from the potatoes can be added back to the mixture. This will make it so that the potatoes are now ready to be cooked.

Adding some extra ingredients

It is a good idea to add a couple of extra things to the batter in order to improve the overall taste. Some extra herbs, feta, and vegetables can be added without overly mixing them into the batter. This will make it so that the pancakes have more texture, and it will also help to make it so that the pancakes have a more of a unique feel to them.

Cooking the pancakes

The pancakes should be cooked by heating up a pan before putting the batter in. Some oil should then be added to the pan, and then the batter can be poured in. It may be difficult to see when the pancakes are cooked on one side as the bubbles will be harder to see through the lumpy dough. However, by simply looking carefully one will be able to find the bubbles. The pancakes should be cooked until they are golden brown. The pancakes can be served plain, but it is a good idea to season them with things like syrup, feta, and with a lot of butter.
